Line:Soft ripened cheese made from unpasteurised cow's milk.
Milk used is daily collected in Seine et Marne and is not threated. We need 10 liters to produce it.
It's a raw milk cheese. It's production is done according to local past custom.
Its similar characteristics to our Brie de Meaux PDO make it a regional cheese of quality.
Regional milk, way of manufacturing and ripening during 4 to 8 weeks will bring to this small Brie a great cheese worth of most epicurean connoisseurs.
